Kohlrabi: the Red Neck Ice Cream

Chou-Rave: la Glace des Red Necks

 La première fois que j'ai ramené du Choux-rave a la maison, ma belle-sœur nous rendait visite. J'avais découvert la plante au marché sans trop savoir ce que c’était. Comme je fais souvent mes courses de produits frais la, j'essaye de gouter ce qui est de saison, que je connaisse ou pas. J'avais demande au fermier qui m'avait dit "Kholrabi". Une fois rentre a la maison ma belle-sœur voit cette espèce de plante venue de l'espace et s’exclame" Red Neck Ice Cream", avec le sourire d'une gamine de cinq ans.
En effet petite, un voisin qui les faisait pousser lui en donnait en lui disant que c'est la glace des red neck (sorte de bidochon). Il suffit de tenir le plante a l'envers, par la tige et de croquer.
La plante a un gout entre le choux et la tige de brocoli. Ça se mange cru ou légèrement saute.
Jusque la j'ai fait un spicy chinese slaw (malheureusement un peu trop épicé, a mon avis quelques pincées de red pepper flakes suffisent largement) et un pudding de kholrabi.

The first time I brought this home, my sister-in-law was visiting. I had found the vegetable at the market without being quite sure of what it was. As I usually get my produce at the market I like to try things that are in season or that I'm not familiar with. I asked the farmer what it was and was told "Kholrabi". Once home my sister-in-law saw the vegetable that came from space and shouted "Red Neck Ice Cream!!!" with the smile of a five years old.
It so happens that when she was a kid a neighbor grew them and told her they were red neck ice cream since you can hold it upside down by the stalk and eat it in an ice cream fashion.
The plant has a taste somwhere between cabbage and broccoli stak. It can be eaten raw or sauteeds. 
So far I've made a spicy chinese slaw (sadly a little too spicy, I think a few pinches of red pepper flakes are plenty enough) and a kholrabi pudding.
